Executive Chef, Matt Hart, has transformed the culinary landscape of InterContinental Sanctuary Cove Resort with a simple, yet solid, philosophy based on creating dishes with bold, internationally-sourced flavours. Inspired by his travels across the globe, Matt has reimagined Cove Cafe's breakfast buffet to include vibrant tapas dishes, fresh healthy juices and more, aswell as being responsible for The Fireplace's stunning wood-fire menu and the success of Playground of Possibilities catering solutions.
Originally hailing from New South Wales, Matt has cultivated an impressive career in the hospitality industry with specific expertise in Resort fine dining. Developing his expert skills across multiple Sheraton properties saw him relocate several times to Port Douglas, Geelong and finally, Gold Coast. Launching his career as a Commis Chef at Sheraton Mirage Port Douglas Resort in 2003, Matt’s passion to satisfy each and every palate saw him swiftly progress to a Chef de Partie and later relocate to Sheraton Geelong to take on the role of Sous Chef leading a small team to success.
Moving full circle in his expert tour of Sheraton kitchens, Matt returned to Sheraton Mirage Port Douglas Resort in 2013 and was promoted to Executive Chef. Now firmly settled in balmy Sanctuary Cove, Matt’s broad background of experience ensures that InterContinental guest’s needs are not just met, but their expectations are exceeded.
