This week, InterContinental Sanctuary Cove Resort’s prized culinary team, led by Executive Chef Matt Hart, unveiled its brand new winter menu for its signature dining destination, The Fireplace. Here, we give you an exclusive first glimpse into the brand new offering.

Renowned and respected on the Gold Coast as one of the region’s premier dining destinations, The Fireplace is the ultimate hot spot for an intimate occasion or a big celebration. Boasting an open-air kitchen where diners can view mise en place right before their eyes in an ambient and homely environment, The Fireplace has been beckoning diners since its inception.

A collaborative effort between the culinary team, Matt Hart and his expert chefs have summoned a menu that will deliver a memorable dining experience and heat up your winter evenings. Sparked with wood-fired cuisine and infused with flavours of the season, the dishes connect you to the freshest tastes of the Gold Coast, from racks of wood-fired sovereign lamb and seasonally infused pastas to market-fresh fish that underpin the seafood entrees.

“The menu is designed to showcase unique ingredients and local styles coupled with exemplary service to give our customers a great dining experience,” says Matt.

“Everything dished up is authentic and simple that lets the flavours be the highlight of the dish.”

While still harbouring the classics such as lamb striploin with sweet potato and red wine glaze and the braised beef short rib, the menu ships into new territory with an additional three pasta dishes including moorish pulled chicken gnocchi bathed in sage beurre noisette. Along with highlighted mains of pork belly dressed with fig puree and wrapped in prosciutto, and Queensland Barramundi teamed with fresh octopus and spinach vichyssoise.

For the sweet tooths, the dessert offerings tempt with the likes of black sesame panna cotta, orange parfait and a summer fruit tart. For dessert with a savoury twist, there’s lashings of cheese on offer, served with homemade crackers and quince paste.

Honing in on the fresh local produce abundant in Queensland, Matt and his team make it their focus to ensure the best quality ingredients are used in their dishes, which ensures rich, hearty flavours and a heightened aroma and taste to each dish.
