Just in time for summer, we've launched an all-new High Coffee menu inside The Fireplace – infused with floral motifs, vibrant summer-inspired hues and Vittoria Coffee Single Origin notes.
The Fireplace’s ornate French doors open to the resort’s fountain terrace, inviting guests to bask in garden vistas while indulging in three-tiers of sweet and savoury delicacies. Hart’s new summer-inspired additions to the High Coffee menu include vanilla-frosted strawberry tarts, caramel mousses adorned with edible florals, almond butter biscuits, pressed cucumber finger sandwiches and open brioches filled with salmon parfait caviar.
Queensland’s first High Coffee experience – inspired by the art of High Tea and modernised for the caffeine-enthused Australian market – is enriched with Vittoria Coffee Single Origin-infused mixology moments sure to wake guests up from their poolside summer slumber. Aside from The Fireplace’s ever-popular signature Espresso Martini, the new menu welcomes the Cold Brew Spritz which is infused with Sparkling Brut and a seasonal citrus twist.

Sanctuary Cove’s 4.2 hectares of tropical garden thrive during spring and summer, so it makes sense that our guests’ taste should be an extension of what they see, smell, hear and touch while exploring the rest of the resort.” said Matt Hart, Executive Chef at InterContinental Sanctuary Cove Resort. “Light mousses and fresh summer fruits are prominent in the new menu – I’ve focused on tying delicate flavours together and moving away from heavier ingredients that remind the palate of winter months.”
